Ingredients:
2 tablespoons butter
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cups chopped cooked chicken
1 10 3/4 oz can cream of chicken soup
1 10 3/4 oz can cream of mushroom soup
1 10 oz can diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1 teaspoon ground cumin
2 tablespoons hot sauce
2 cups coarsely crushed tortilla chips
2 cups (8 oz) shredded cheddar cheese
Melt butter in a medium skillet over medium high heat. Add chopped onion and bell peppers, sauté 8
minutes until tender. Stir in chicken
and the next 6 ingredients: cook, stirring occasionally, 2 minutes.
Place
half of crushed tortilla chips in a lightly greased 13*9 inch pan. Layer with half each of chicken mixture and
the shredded cheese. Repeat layers,
ending with cheese.
Bake, uncovered, at 325 for 45 minutes or until mixture is thoroughly heated.
